Traditional Regional Cuisine
The culinary diversity of Varna region offers numerous meals that are tasty, spicy and rich in flavour. It features the traditional Banitsa of Dobrudja, the traditional Black Sea/Danube fish soup or the traditional mussels of Balchik. Dried scad salad and small sprat, is served both fried and as a stew in some towns and villages along the coast, also known as 'sardela' in the Varna region, cokked of layers of fish to which opnion, garlic, black pepper and basil leaves are added.
